A couple of years back we visited Cave Spring Vineyard during harvest and spoke with Tom Pennachetti about the Riesling grapes. Those grapes are now wine in the bottle, so we thought we'd cook something using the wine.

So, one of the favorite things to serve in a party is French onion. I’m not talking about that package stuff, I’m talking about taking those caramelize onions, the garlic and the shallots. Fixing it with a little bit of sour cream, a little bit of mayonnaise, celery, salt, Worcestershire sauce. You try this recipe. You are going to be the star of the party. Try it. Alright, so to start this garlic and onion dip that we’re going to make. First we’re going to take some yellow onions and get them into a pan here with a little bit of butter. I’m going to cook them slow. We’re not going to caramelize them. We’re just going to let them cook until they’re nice and tender. So these bad boys go down first, and this is going to take about 10-15 minutes. Then later we’ll add in some shallots and some garlic. Now the cool cooking tip about this, if you could cook onions like this ahead of time and keep them in the fridge. They can go on top of burgers. They go in the grill cheese sandwiches. You had a little beef broth. You make your own French onion soup. But this is a really nice technique to do. You going to cook them slow and really kind of bring out those sugars and almost caramelizing. So what I got here, those onions that I let caramelize. A little bit of shallots and then some garlic. Lot of big flavors going into some sour cream. Okay, we let those cool down, so they don’t sit there and melt the sour cream. Now, a little mayo goes in. I always have to have big kitchen spoons. A little Worcestershire sauce and a little celery salt. And that right there folks, that will go head to head with any of that package dip you find. Now, making this ahead of time is a great idea because it really lets those flavors marry. The only thing I really recommend is that you have a lot of chips. It’s a killer. Now, one of the favorite things that we serve at Johnny Garlic, my restaurant, is this bad boy right here, the French onion dip. These girls are going to love that. Chips, French onion dip, wine and beer, and all this entertainment. These sports athlete playing ball behind them, come on now.
